I christened this my Birthday Avocado Smoothie because I perfected it today on my birthday. I’m new to smoothies because I was never really into a ‘liquid breakfast’. But this smoothie is so thick you could eat it with a teaspoon like a yoghurt, or you could thin it down with water and ice cubes and drink it like a milkshake.
It all started with my recent craze for avocados and me trying to eat more healthy breakfasts instead of sugary cereals. As a result I didn’t want to include banana, like most people seem to do in smoothies because I wanted to keep calories and sugars down. However thanks to the sweetness of the cucumber this smoothie needs no extra sugar and is really refreshing not only at breakfast time but also post work-out or as a snack. The ingredients are all packed with nutrients for your ‘most important meal of the day’. The nut butter gives it more flavour and a little bit of ginger gives it that extra kick of fresh taste. Dont be disheartened by the green colour. This monster smoothie (as I described it to my daughter) is so yummy I might just make it a habit 😀
One last note: if like me you are new to smoothies and you’re thinking “no way can I whip this up in the morning rush”…well the good news is that this smoothie can be prepared the night before with the kid’s school lunches and it wont change colour or texture. It might actually taste better after a night chilling in the fridge.

Avocado Cucumber Smoothie
(makes 2 breakfast glasses or one big smoothie to snack on throughout the morning)
- 1/2 – 1 ripe avocado
- half a cucumber
- 1 packed cup of spinach leaves
- 1 tbsp nut butter (today I used peanut)
- 1 tbsp chia seeds
- 1 teaspoon minced ginger
- half cup unsweetened almond milk
- ice cubes / water added depending on consistency
Blend all ingredients until smooth and creamy. Enjoy!
