Carrot Cake Baked Oatmeal

Delicious breakfast or snack. If you leave out nuts you can also add it to the lunchbox

200g rolled oats (2 1/2 cup)
1tsp baking powder
2 tsp ground cinnamon
1 tsp ground ginger
150g grated carrot (1 1/2cup)
2 tsp vanilla extract
60ml honey (1/4cup)
240ml milk (1 cup) I used Almond
1 large egg

1. Preheat oven to 180C and spray a 20cm square pan with oil spray
2. Mix the dry ingredients in a bowl: oats, baking order, spices, carrot
3. Beat egg in another bowl and add vanilla, honey, milk and egg
4. Pour wet ingredients into dry and stir to combine
5. Transfer mixture to the baking dish
6. Bake for about 35 minutes until golden and set.
7. Allow to cool and slice into portions
8. Store in the fridge
9. When serving, warm in the microwave and you can top with some crushed pecans and a drizzle of maple syrup
