Even though my daughter's school has always been nut free, we love peanut butter and make the best of it at for home snacks or during the summer. Here are 3 easy ideas:
Peanut Butter Energy Balls
- 100g rolled oats
- 120g smooth peanut butter
- 100g honey
- 20g flaxseeds
- 1 tsp vanilla extract
- pinch of salt
- 75g roasted peanuts or raisins
Method
- Place all ingredients in a blender and mix at high speed for about 20 seconds
- Roll into about 16 balls and refrigerate for them to set
Peanut Butter French Toast
We love Peanut butter on toast, so this turns it into a more nutritious delicious breakfast:
- 6 slices of bread
- peanut butter to spread
- 1 banana
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp of cinnamon
- 2 tbsp milk
Method
- roll the bread slices with a rolling pin to flatten and spread 3 of them with smooth peanut butter.
- Close into sandwiches and cut off the crusts. Slice each sandwich into 3 rectangles.
- In a bowl, mash the banana and add beaten egg, vanilla, cinnamon and milk
- tip the rectangle sandwiches in the egg mixture until fully coated and fry in a little butter on both sides until golden.
- Serve with fruit
Peanut noodles
- 1 packet/portion noodles
- 2 tbsp peanut butter
- 2 tsp soy sauce
- 1 tsp maple syrup
- 1 tsp sesame oil
- 2 tsp rice vinegar
- handful of edamame beans
Method
- Mix the sauce ingredients using a whisk until smooth.
- Cook the noodles in some chicken stock for 3 minutes or according to packet instructions.
- In the last 2 minutes, add a handful of frozen edamame and let them cook with the noodles
- Use a tablespoon of the cooking liquid to loosen up the peanut sauce.
- Drain the noodles and edamame, add the peanut sauce and mix well to fully coat the noodles.
- Add more soy sauce if desired.
