Although these are not Lunchbox friendly because of the walnuts, they were a huge success when I served them in our new year's eve party, so I just had to share the recipe. Perfect for entertaining or family picnics!
Ingredients
1 rectangle sheet vegan puff pastry
1 onion
2 garlic cloves
100g sliced mushrooms
50g walnuts
400g cannelini beans drained from tin and rinsed
2 tsp Marmite
2 tsp soy sauce
0.5 tsp rosemary or thyme
Method
Fry the onion, garlic and mushrooms in a little olive oil
Pulse the walnuts in a blender until they are little pieces
Transfer nuts to a bowl
Pulse or mash the rest of the raw and cooked ingredients just enough to break them down. They still need to be lumpy.
Add them to the bowl of nuts and mix
Open the pastry and cut in half.
Add the mixture in the shape of a log and cover with pastry
Cut into pieces and brush with some plant based milk
Sprinkle with poppy or sesame seeds
Bake for 12-15 minutes at 180deg in oven or air fryer
