Ingredients
1 can chickpeas rinsed and drained
2/3 cup natural peanut butter
1/3 cup dark chocolate chips (dairy-free if necessary)
2 tsp vanilla extract
1 tsp baking powder
1/4 cup honey
1/2 cup oats (gluten free)
Method
Blend the oats until they are fine. Add the rest of the ingredients except chocolate chips into blender and blend until smooth. Stir in chocolate chips and mix gently with a spatula until recently distributed. Roll into balls and place on a greased baking tray. Flatten with the back of a spoon into a cookie shape. Bake in a preheated oven at 180C for 15-20 minutes. Allow to cool on a wire rack for a few minutes
